Ogbono (African Mango) soup, with less saturated fat

400g diced beef or diced chicken breast
2 medium red onions, peeled and quartered
3 garlic cloves, crushed
1 (10g) chicken stock cube
1 large red chilli, deseeded and chopped
4 tbsp olive oil
50g king prawn, cooked and peeled
60g ground GuDee Ogbono
1 tbsp paprika
300g spring green or spinach, chopped
- Put the meat, half of the onions, garlic, chicken stock cube, chilli (add less if you prefer milder), and 200ml of water in a medium saucepan. Cook on medium heat for 20 minutes or until meat is tender.
- In the meantime, heat olive oil in a large saucepan. Fry the remaining onions, then add the prawns. Continue to fry for 30 seconds taking care they don’t burn.
- Add GuDee ground Ogbono and fry for a further 30 seconds.
- Stir in the meat and its stock with 300ml of water. Reduce the heat and simmer for 15 minutes until the soup thickens, then stir in the paprika and spring greens or spinach. Continue to simmer for a further 5 minutes.
- Serve with mashed potatoes, gari, oat fufu or ground rice.
