Egusi Energy Bites

    These tasty GuDee Egusi energy bites make the perfect high-protein snack or dessert!

    Shopping List
    220g GuDee Egusi seeds
    200g oats
    60g peanut or almond butter
    80ml maple syrup
    1 tsp vanilla extract
    60g dark chocolate chips

    1. Heat medium pan and stir fry the GuDee Egusi seeds (without oil) for 4 mins.
    2. Toss the toasted GuDee Egusi seeds into a blender, ground into a meal. 
    3. In a food processor, pulse together the GuDee Egusi meal, oats, nut butter, sweetener and vanilla extract until a dough forms.
    4. Fold in the chocolate chips.
    5. Roll into 12 balls and place on a parchment-lined baking sheet.
    6. Refrigerate for at least 30 minutes to firm up before enjoying.
    7. Customise by adding shredded coconut, raisins, seeds, or nuts.
    8. Store chilled.
