Chilled Egusi Porridge

    This protein-packed Egusi porridge makes a nutritious grab-and-go breakfast!

    220g GuDee Egusi seeds
    250ml soy milk
    250ml almond milk
    1 tbsp maple syrup or honey
    1 tsp vanilla extract
    1⁄4 tsp cinnamon
    60g chia seeds

      1. Heat medium pan and stir fry the GuDee Egusi seeds (without oil) for 4 mins.
      2. Toss the toasted GuDee Egusi seeds into a blender, ground into a meal. 
      3. Combine the GuDee Egusi meal, soy milk, almond milk, sweetener, vanilla and cinnamon. Blend until smooth.
      4. Pour into a bowl and stir in the chia seeds.
      5. Cover and refrigerate overnight or at least 4 hours until thickened to a pudding-like texture.
      6. Enjoy chilled and customize with toppings like fruit, nuts or granola.!
      7. Keep refrigerated and consume within 3 days.
